Top 5 BBQ Recipes When Camping

If you’re planning a camping trip to our Holiday Park in Cornwall, these BBQ recipes are perfect for easy, delicious meals right at your pitch. Whether you’re using a grill or portable BBQ, these dishes are designed for simplicity and big flavour with minimal mess.


1. Foil Packet BBQ Chicken & Veggies

  • Prep Time: 10 minutes
  • Cook Time: 25–30 minutes
  • Serves: 2 per packet

Ingredients:

  • 2 boneless, skinless chicken breasts (cut into chunks)
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • ½ cup BBQ sauce
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Aluminium foil

Instructions:

  1. Chop veggies and chicken. Toss veggies in olive oil, salt, and pepper.
  2. Place chicken and veggies on foil, top with BBQ sauce.
  3. Seal foil into a packet and grill over campfire coals or grill grate for 25–30 minutes, flipping halfway.
  4. Ensure chicken is cooked through (165°F internal temperature).

2. Grilled BBQ Ribs (Pre-Boiled)

  • Prep Time: 10 minutes at camp
  • Cook Time: 10–15 minutes
  • Serves: 4

Ingredients:

  • 1 rack pork ribs
  • BBQ dry rub (paprika, garlic powder, brown sugar, chili powder)
  • 1 cup BBQ sauce
  • Foil (for wrapping)

Instructions:

  1. At home: Boil ribs in water with garlic and onion for 1–1.5 hours. Rub with BBQ seasoning and wrap for transport.
  2. At camp: Unwrap, brush with BBQ sauce.
  3. Grill over medium heat for 10–15 minutes, flipping and brushing with sauce until glazed and heated through.

3. Campfire BBQ Shrimp Skewers

  • Prep Time: 10 minutes
  • Cook Time: 5–6 minutes

Ingredients:

  • 1 lb large shrimp (peeled and deveined)
  • ½ cup BBQ sauce
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper
  • Wooden or metal skewers

Instructions:

  1. If using wooden skewers, soak in water for 30 minutes.
  2. Toss shrimp in BBQ sauce and seasonings.
  3. Skewer shrimp and grill over medium-high heat for 2–3 minutes per side, until opaque and charred.

4. BBQ Pork & Pineapple Kebabs

  • Prep Time: 15 minutes
  • Cook Time: 12–15 minutes

Ingredients:

  • 1 lb pork tenderloin, cubed
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, cubed
  • 1 red onion, cubed
  • ¾ cup BBQ sauce
  • Skewers

Instructions:

  1. Marinate pork in ½ cup BBQ sauce for 1 hour (or overnight in cooler).
  2. Assemble skewers, alternating pork, pineapple, and veggies.
  3. Grill over medium heat, basting with sauce, for 12–15 minutes until pork is cooked through (145°F).

5. BBQ Stuffed Portobello Mushrooms

  • Prep Time: 10 minutes
  • Cook Time: 12–15 minutes
  • Serves: 2–4

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, diced
  • ½ bell pepper, diced
  • ⅓ cup BBQ sauce
  • 1 tbsp olive oil
  • Salt & pepper
  • Foil (optional)

Instructions:
